Barley & Watercress Soup

A lot of pots on the stove perhaps, but still a simple soup, brought together in stages. A Dashi Stock; Cooked Barley; Potatoes cooked with Bay Leaves then part blended; Onions, Squash, Garlic, Watercress and fresh Herbs sauteed gently together; All combined in one pot, served with chopped Scallions and Toasted Rye Bread.
