Christmas in Almeria

Feliz Navidad! I am spending Christmas and New Year with some Swiss friends in Llas Presillas Bajas, a small village near Almeria in Spain. A simple, well stocked country kitchen and a ready supply of local produce provides a chance to experiment with some regional dishes, inspired by a copy of the ‘Moro’ cookbook I brought with me on my travels. Here is a taste of some dishes we’ve enjoyed.

Brunch at Llas Presillas Bajas with Viola & Kubli.

‘Salsa Cruda’ a simple pasta dish of Grated raw Tomatoes, Garlic, Dried Herbs, Parmesan, Sea Salt, a generous helping of Olive Oil. The first night’s meal shared with Kubli, Viola and neighbour Juergen.

Ali, the proprietor of a seaside restaurant in the small town of Las Negras, rustles up a grilled Chicken lunch.

Kubli prepares a generous pot of Mussels cooked with Onions, Garlic & White Wine.

A risotto made with leftover liquid from the previous nights’ mussels, completed with Asparagus and parmesan, and served with Panfried Beef Fillet.

‘Lomo’ (Pork Chops) baked with Capers, Olives and Tomato Sauce served with Baked Squash and a dish from the Moro Cookbook: Cauliflower with Spanish Onions, Pine Nuts (in this case substituted with Almonds) Raisins and Saffron.

A tapas dish from ‘La Raspa,’ a small restaurant on the outskirts of San Jose, a town close to Llas Presillas.
