Pasta, Pesto, Pronto

I was stumped for inspiration for what to cook in the evening. A simple, tasty meal, produced quickly. Stopping off at an Organic shop on the way home, I thought of pasta. I don’t eat this much – a legacy of days when I ate far too much of it, put on lots of weight, and built a picture of this being ‘bad.’ I can shelve that idea now, thankfully. I picked up some fresh Organic Tomatoes, and enquired about fresh Basil. They bought me a bunch of the most amazing, luscious Basil, inspiring me to head home and create a fresh Basil, Parmesan, Pine Nut & Olive Oil Pesto. A simple Tomato Sauce made with Olive Oil, Garlic, Sea Salt, Tomatoes, some Basil and a splash of Balsamic Vinegar, and the meal was done. Delicious. And enough leftover for lunch the next day.
