Where’s the Cheese? Not here, Grommit. This is a recipe provided by Happy Kitchen, which I tested out using a couple of variations. Both featured cooked Millet, Agave Nectar, Chopped Pears, Apple Juice, Coconut Oil, Lemon Juice & Rind, on a crushed Gluten-free biscuit base; one was created with Blended Cashew nuts and the other with Almonds. I’ll be honest: the results did not receive universal acclaim. It’s surprisingly rich. But it’s an illustration of possibilities which can be explored with food. This is not so much about being ‘non cheese’ as exploring the potential of grains, natural sugars and oils to produce tasty dessert treats, which don’t have to be rammed full of dairy and processed sugars.
