All this contact I’m having with Vietnamese cuisine lately is having an impact, I am drawn to making one pot noodle soups! This one, an Udon Noodle soup using a Kombu & Shiitake broth with addition of Fish Sauce and Shoyu, Lemon Grass, Prawns Sauteed in Chilli and Garlic, Scallions and Panfried slices of Lotus Root.
