One day, when meeting with Hieu at Cay Tre Soho talking menu design and print, I had a chance meeting with Henrietta Lovell, who was about to take Hieu through a few samples from her Rare Tea Company range, selected to complement Cay Tre dishes. Once again, a little investigation uncovers quite a special operation. Henrietta has set up the Rare Tea Company, personally sourcing the very best teas from around the world, applying care and attention in the way teas is packaged and shipped, and simply ‘paying the farmers what they ask.’ Check out the Rare Tea Company website for more details.
