‘From Elderflower to bottles of cordial, with the help of lemons and sugar. I used the Sophie Grigson recipe which comes up first on the internet when you google elderflower cordial and uses the ingredients below. We didn’t have enough sugar so I used about 1.4/1.5kg instead of 1.8k, and about a third was brown sugar, hence the colour. But it was sweet enough, and delicious.’
20 heads of elderflower
1.8 kg granulated sugar, or caster sugar
1.2 litres water
2 unwaxed lemons
75 g citric acid
