Introducing the delightful Nicky Clinch. Recent contributor to Wholefood Kitchen, and soon to appear as guest chef at Happy Kitchen’s inaugural Pop-Up night, on Friday 7 October. It promises to be a hum-dinger. The theme of the night is ‘Creature Comforts’ – a hearty three course wholefood meal (plus extras) inspired by comfort foods, but demonstrating that ‘feelgood’ food does not have to come with a serving of self-flagellation. ‘Cooking and creating beautiful food is a direct expression of my heart and a way that I share my love.
For me, creating a dish or a meal is like writing a song or painting a piece of art, each ingredient, colour and texture has its perfect place in the dish, resulting in something harmonious feeding our emotional, physical and soulful needs.
Our planet is full of abundance not lack. I cook aligned with this abundance, using only natural whole foods, sugars and ingredients… working with the seasons, the environments we live in and listening to our emotional and physical needs.
Coming from a history of yo-yo dieting, anorexia & emotional binging my journey and relationship with food has been very intimate, challenging and wonderfully life changing. Who says that to eat healthily, balanced and in a more empowered way we need to deprive ourselves? It certainly did not work for me – instead I am learning and want to share with you how we can eradicate completely this feeling of deprivation and instead eat and live in a more nourishing, utterly delicious & joyfully abundant way.
It is an honour to be working alongside Lisa & Ellie and The Happy Kitchen family to be able to share this vision with everyone. I know it will be a fantastic night!’
