Sure, Aotearoa means ‘Land of the Long White Cloud,’ but there are plenty more things that jump out as significant features of the New Zealand experience. Among these is the humble ‘Savoury Muffin’ a prominent counter feature at cafés or ‘lunch bars’ across the land. These homebaked delights are generally bursting with seasonal ingredients (various combinations of Sundried Tomatoes, Zucchini, Leeks, Spinach, Feta, Cheese, Mushrooms, Herbs etc.) and packed full of flavour. This was the pick of the bunch, picked up at a lunch bar in Gore, at the bottom of the South Island. As was the case here, they are invariably served warm with a healthy slab of butter.
