Campervan cooking

During our holiday, Nicky and I made a two week trip around the South Island of New Zealand. Our home and kitchen during this time was a ‘Mighty’ Campervan we christened ‘Brian’ for the journey. ‘Brian’ was stocked with the bare basics: 2 saucepans, 1 frying pan, a few utensils. We had two plates, two bowls, two cups, two glasses, two knives, two forks, two spoons. A can opener. Some matches. You get the idea. But despite or perhaps because of these limitations we ended up enjoying the challenge of cooking simple, complete meals using a few ingredients and the minimum of equipment. Shown here are some of the delicious meals we created, employing the arts of ‘one-pot’ and ‘pot rotation.’ Cheers Brian!
